On another
topic, I haven’t talked about the cafeteria here yet, but it has been GREAT!
The women who work in the kitchen are very friendly, and have learned that US
visitors prefer variety in their diets, not the strict diet of nshima that
Zambians enjoy. We have enjoyed all sorts of good Zambian prepared stewed
meats, lots of cabbage (raw salad, cooked, and mixed with peanuts), green
pepper/tomato salads, rice, noodles, corn bread, and fruit salads. There is
really nothing to complain about (from me) on the food side- although the
students who are less adventurous with foods have been snacking on granola bars
on the side.

Meal time is
strictly observed: 7:00 breakfast, 1:00 pm Lunch, 6:00 pm Dinner. The students
have been very prompt, we have not adjusted to African style time, and the
workers here have adjusted to American time after years of working with Dr.
Thuma. So, even though the food has been excellent, there are some foods they
just don’t have here – like cheese (so no pizza, and it was a special surprise
the day we had mac and cheese). So don’t worry parents and family – your kids
will be coming home hungry for their favorite foods again!
